Guest Blog: Healthy Treats to Keep the Passover Binging Away!

Passover snacking feels never-ending. It is like we go from constantly starving to stuffed and constipated every few hours. How can we combat matza overload, and this unhealthy cycle without killing ourselves in the kitchen? In the past few years since I wrote my Passover e-course, I have continued to collect new recipes and ideas to make your holiday easier, healthier and overall happier. It is hard to smile when you are hungry or have an upset stomach.

I am excited to share a small taste of these Healthy Hacks with you, as part of our Healthy Passover Bundle with Sabrina. Thanks to Sabrina I am offering take-out Passover soups, salads and snacks to really up your burn, even when you have to work during chol hamoed. How can you use these tools? Here are a few examples.

Big Passover Binge Food: Matzah Pizza

Healthy Hack: (make side by side|)- cut tomato slices, zucchini slices and layer on another baking sheet. Top just like your matzah pizzas and bake alongside.

Big Passover Binge Food: Macaroons

Healthy Hack: Mint Chocolate Patties

Mint Chocolate Patties: makes twelve or so

1/3 cup dried coconut chunks/shreds

1/3 cup cashews

1-2 tablespoons melted coconut oil

2-3 Tb honey/maple syrup/agave

1 tsp peppermint oil

Pinch of salt

2 bars melted dark chocolate 70%

Pinch of salt

1/4 tsp cinnamon and cayenne (makes it sooo much better)

Blend all ingredients from the first list together until smooth. Pat into flattened balls (patties) with your hands and set them in the freezer for maybe 30 minutes. Then coat with the melted chocolate mixture and let set in the fridge on parchment or freezer paper.

Big Passover Binge Food: Matzah Brie

Healthy Hack: Balanced Brie

Matzah Brie- 1 serving

1 piece whole wheat maztah, broken and soaked for 5 minutes/ drained

1 egg + 1 egg white beaten

½ T olive oil for frying

Additions: fresh dill and red pepper flakes, smoked salmon. Try applesauce 1T, cinnamon
